Oysters
Premium quality fresh Pacific Oysters from Tasmania and South Australia arrive live to our premises weekly and are available in small (bistro); medium (buffet); and large (standard). All are available either live or in the half shell, opened daily on our premises to order. To ensure traceability all orders include lease numbers, growing areas, farm name and batch numbers are all provided on delivery.
We also supply high quality frozen New Zealand Pacific Oysters in three sizes, all in ½ Shell and packed into cartons of ten dozen.
Bugs
Bugs are available all year round as a frozen product, either green or cooked at sea. The three sizes available are medium, large and mixed (run of catch).
Mud Crabs & Blue Swimmer Crabs
We stock the very popular Queensland Mud Crabs. Supplied by local fishermen, these can be delivered live, frozen or cooked frozen. Live crabs are kept in aerated tanks to ensure they are kept in the same state as arrived. (Please note that it is illegal to keep female Mud Crabs in Queensland).
We stock the finest quality Abacus Blue Swimmer Crabs from Western Australia. Available cooked frozen, these crabs are individually wrapped when caught to ensure they remain intact.
We are also stocking bulk-packed green frozen Blue Swimmer Crabs from other regions of Australia.
Fresh and frozen local and imported crab meat is an excellent alternative when only the meat is required. Our range includes the Phillips brand pasteurised crab meat available in 227gm tubs. Other sand crab meat comes in 500gm frozen tubs, including the premium Abacus Blue Swimmer meat.
Prawns
Our huge on-site freezer capacity allows us to offer a wide array of prawns all year round. The more common species include King, Endeavour, Banana, Leader and Tiger prawns, and these can be purchased frozen green and frozen cooked at sea. All sizes, from small (ungraded or 30+), medium (21/30), large (10/20), and extra large (U10), are always in stock.
Additionally, we supply prawns in cutlet form (tail-on shelled green) available in sizes small (26/30), medium (21/25), large (16/20) and extra large (10/15) This large range comprises of local and imported tiger prawns.
Fully peeled green prawns (prawn meat, no tail) are available in sizes medium (40/60) and large (30/40). Imported and local meat is stocked. Cooked and peeled shrimp meat is stocked as well as whole scampi.
Crayfish, Redclaws & Marrons
Both Tropical and Southern Crayfish are available either live (dependant on season), whole green frozen or cooked frozen. Whole crayfish range in size from 0.5kg to 1.2kg each. We also keep Tropical Cray Tails in stock frozen.
Southern (WA) Crayfish are also available cooked, halved, frozen and individually wrapped at a weight of 225-250gms per half. This product is ideal when preparation time is limited.
Two species of freshwater yabbies are kept for our customers – locally farmed Atherton Tableland Redclaws, and Western Australian farmed Marrons. We get regular shipments of the local Redclaws so these are readily available. Please let us know in advance if live Marrons are needed.
Tasmanian Scallops
This premium product is available fresh in season with roe-on in the half shell or as meat. Harvested both from wild fisheries and farmed aquaculture beds off eastern Tasmania, supplies are now reliably available in good volumes. Pantacchini’s are the North Queensland agent for Spring Bay Seafoods, Tasmania’s premium supplier of Tasmanian Scallops. The season is usually from May to November; however we keep good stocks of frozen for the other times of the year.
A full range of other Scallops are available, both local and imported, with roe-on or roe-off.
Live Mussels
Fresh Live Black Mussels are shipped twice weekly from Victoria and Tasmania to ensure absolute freshness. Our Live Mussels include those supplied by Spring Bay Seafoods and Sea Bounty.
Frozen NZ Greenlip ½ shell and Whole Shell Mussels from New Zealand are also stocked.
Yarra Valley Caviar
Yarra Valley Salmon has been farming salmon for their eggs in Victoria’s Yarra Valley since the mid 1990’s. Farmed in the pristine waters of the Rubicon River, these Atlantic Salmon have a free life running against the river flow all year, and especially during their Autumn spawning season. Yarra Valley Salmon is the only fresh aquaculture farm in the world that uses a natural method of harvesting roe from the salmon, producing a world-class product. Yarra Valley Caviar is available in 300gm jars.
